Makati (African Dish)

Ingredients

1 cup Rice
1 cup thick Coconut Milk
1/2 cup Sugra
1/4 cup Milk
1 tsp. Instant Yeast
1 tsp. Cardamom seeds
Khaskhas to sprinkle

Method:

  1. Soak rice in water for 3 hrs. Rinse out the water and put it in the liquidizer with coconut milk, milk, yeast, and cardamom seeds. Blend it till the mixture is smooth. Take out the mixture in a large bowl,(preferable transparent) add sugar and whisk it properly. Keep it in a warm place to rise for 3 hrs. If the weather is hot 2 1/2 hrs should be enough.
  2. Heat margarine or oil in a non-stick frying pan. Stir the rised mixture lightly and drop 1 cup of mixture in a middle of a pan and fry it covered for 7 mins on a low heat. Open the cover and sprinkle khaskhas on top of makati.
  3. Put the pan in preheated grill to cook on to (take care it will cook in the grill very quickly) take it out and cool on wire rack. Serve warm. Repeat with the remaining mixture. It will make appr. 4 makati. Enjoy!
