Every day I look forward to Saroj's and the contribution recipies. I learnt this easy recipe from my daughter Radhika Suresh and I would like to share it with you all.

Carrot Halwa

Ingredients

1/4 kg or 1/2 lb. carrot
3-4 cups milk
2 cups sugar
1 cup butter or ghee
1/2 tsp cardomom pwd
2 tbsp. almond, cashew pista nuts grated
silver foil optional

Method:

  1. Cut carrots into one inch pieces.
  2. Grind it in the blender with the milk.
  3. Cook it in the pressure cooker until it is soft.
  4. Transfer it into a microwavable container.
  5. Add sugar(you can add more sugar according to taste), ghee and cordomom powder.
  6. Microwave the contents for about 15 to 20 mts or until the ghee glistns on the sides of the container.
  7. However you have to stir every 5 mts.
  8. Sprinkle grated almonds, cashews and pistascio nuts.
  9. Garnish it with silver foil.

Voila! Carrot halwa is ready without much sweat!
