Stuffed Brinjals

Ingredients

1. Baby Brinjals - 6
2. Potatoes - 2 (medium).
3. Onions - 2 (large sliced).
4. Dry dessicated coconut - 1 cup
5. Red chilli powder - 2 teaspoons
6. Garam Masala - 1 teaspoon
7. Turmeric powder - 1/2 teaspoon
8. Hing - 1 pinch
9. Jeera - 1/2 teaspoons
10. Jaggery - 1 1/2 teaspoon
11. Salt to taste
12. Onion - 1 chopped.

Method:

  1. Heat oil in a pan and shallow fry sliced onions & dessicated coconut separately until golden brown.
  2. Grind onions & coconut together [the mixture must be thick].
  3. Add red chilli powder. Haldi, salt, jaggery & garam masala powder to the above . Mix well.
  4. Make 2 slits on each brinjal and fill in the above masala.
  5. Heat 2 teaspoons of oil, add hing, jeera, & 1 chopped onion. Fry for a minute, then add the stuffed brinjals & the remaining masala.
  6. Add chopped potatoes. Add some water & cook until the brinjals & potatoes are soft.
  7. Serve with some chopped coriander.
