My name is Lakshmi and I live in NY USA. This is my second recipe that I am posting. This particular recipe is an old traditional family secret, which I am sure most of the families have  some similar version. Well anyway  I would like to share this family favorite recipe with the rest of the readers and with those who consider cooking an art.

Stuffed Eggplants

Ingredients

5 small round Eggplant or Bringals
2 tbsp Coriander seeds
2 tbsp Cumin seeds
1 tbsp Urad dal
1 tbsp Channa dal
1/2 tbsp Fenugreek seeds

Method:

  1. Fry the condiments without oil and grind them into dry masala or powder
  2. Silt the small eggplant into 4 horizontal silts
  3. Stuff the dry masala or powder into the 4 slits of the eggplant
  4. Take oil on a flat pan and on slow flame stir fry the eggplant till tender do not cover the pan or add water, since the eggplant will become soggy. Cooking time is slightly longer since it is being cooked in slow flame
  5. Serve hot with either Rotis or Rice. Enjoy.
