Bean Buritto
Ingredients
TORTILLAS
3 cups Wheat Flour
1 tbsp Butter
1/3 cup Warm Milk
1 teaspoon Baking powder
1/2 teaspoon Salt
BEAN BURITTO
1 cup Rajma
2 Onion
4 Garlic Cloves
3 Green Chillies
1 table spoon Omam
1 table spoon Red Chilli Powder
1/4 cup chopped Coriander Leaves
1/2 cup grated Cheddar Cheese
5 Tortillas
Method:
- Mix all dry ingredients and sift. Mix in butter (room temperature).
Add milk gradually. Knead till smooth.
- Cut dough into 2 inch balls and roll out flat (very thin) with rolling pin.
- Cook on tawa until lightly spotted.
(These can be prepared in advance and refrigerated. This can also be prepared with cornflour or all purpose flour (maida) also.)
- Rinse Rajma (red kidney bean) and soak in clean water 4 - 6 hours, or overnight.
- Pressure cook till it becomes soft so that it can be mashed easily.
- Chop onion and saute it in little oil.
If you are conscious of fat content you can Microwave the onion on High power (COOK MODE) for a few minutes until soft.
- Chop the green chillies.
- Peel and crush the garlic.
- Drain the cooked Rajma and keep the liquid.
- In the mixie puree the rajma bean, onion, garlic, green chillies, omam, chilie powder and the cut green coriander.
If needed you can add the drained liquid from Rajma that you have reserved. This final product should be fairly thick and not watery.
- Pre-heat the oven to 180 degrees Centigrade.
Place a flour tortilla on a greased oven proof dish.
Place a scoop of the Rajma puree.
Sprinkle with shredded cheese and roll the tortilla. Bake for 5-7 minutes.
Remove from oven and allow to rest for 5 minutes.
One can increase or decrease the quantity of omam, Red chilly powder, coriander leaves, green chillies and the cheese according to their individual taste.You can prepare atleast 5 bean burittos with this mixture.
