Hi everyone, I am Devi from Auckland. I have just been introduced to the bawarchi site and am pretty pleased with the number of different recipies found in it. I thot I will add another simple vegetarian recipie to the list. All comments are welcome at d.titus@ace.ac.nz.

Stuffed Baigan

Ingredients

1 kg Brinjals preferably round ones.
2 large onions
Dry Red chillies 4 or 5 or (according to your taste)
Veg oil 200ml
2 table spoon of butter.

Method

  1. Wash and wipe the brinjals.
  2. Make 6 or 8 slits in each one with the stem intact.
  3. Chop and grind onion to a paste with some salt and the redchillies.
  4. Stuff the brinjals with the paste.
  5. Heat oil in a deep pan.
  6. Once the oil is hot put the stuffed brinjals and close it with a lid.
  7. After the brinjals become very tender put the butter.
  8. Let the brinjals fry till oil come out.
  9. Garnish with coriander leaves.
  10. This dish tastes best with dal and hot rice.

P.S. If you like your fry to be well done then try just cutting the brinjals into length wise pieces, instead of slitting them and put the onion and chilli paste and fry in the same way.
