Hi,
I'm Therese Brown and live in the San Francisco Bay Area. I've been a vegetarian and cooking Indian foods for over 20 years now. I like to experiment and love getting ideas from all the wonderful contributions here on Bawarchi. If anyone has any specially great ideas regarding Indian foods kids love (my kids like most) I'd love to hear from you. My e-mail is: pastiche@concentric.net

Chana Dal with Zucchini and Fresh Dill

Ingredients

1/2 Cup Chana dal
2 tsp fresh grated Ginger
1/4 tsp Turmeric
Salt to taste
1 dried Red Chilli
1/2 tsp Cumin seeds
2 large cloves Garlic, quartered or sliced
1/4 tsp Hing
1 tbsp Ghee or good Oil (I like walnut oil)
2 small Zucchini, sliced
1/4 - 1/2 Cup fresh Dill, finely chopped
Salt to taste

Method:

  1. Boil chana dal in 2 - 3 cup water, with the ginger, tumeric and a little salt, until soft and breaking apart.
  2. Heat oil in a saucepan and add chili, cumin seeds, and garlic.
  3. When chilli and cumin are brown and the garlic has started to brown add the hing and let it cook a minute or two.
  4. Add the sliced zucchini to the spices in the saucepan and sprinkle with a little salt. Stir, cover and let cook a few minutes.
  5. When zucchini is starting to get tender add the dill and just cook slightly. Don't let the zucchini get mushy.
  6. Add zucchini/spice mixture to the cooked dal. Let it simmer a bit for the flavors to integrate. Taste for salt.

This is good with Roti or Rice and Yogurt.
