I'm Naga, I would like to share our favourite dish with you all,it turns out great everytime I make,this is a great recipe for egg-lovers,Please enjoy making & serving this dish and feel free to send in your feedback to naganaresh@hotmail.com

Ingredients

For Ghee Rice:

Basmati rice-3 cups
Onions-1 large (finely sliced)
Garlic-2-3 cloves (finely sliced)
Green Chillies-3-4 nos (slit into half)
Bay leaves-3-4 nos
Cardamom (green)-3nos
Cinnamon-1 small stick
Cloves-2-3 nos
Ghee-21/2 tbspn
Salt as per taste
2 & 1/2 cups of warm water

Method:

  1. Wash and soak rice for 15 mins.
  2. Take a cooker or pressure pan, heat ghee in it, add bay, cloves, cardamom, cinnamon, saute it for half a second. Then add onions, chillies, garlic, saute it until onions turn light brown then add well drained rice to it fry it for 3-4 mins then add warm water & salt to it,pressure cook for one full whistle.
  3. Then remove the lid check the salt.

Egg Curry:

Ingredients:

Eggs-6 nos (hard-boiled)
Onions-1 large (finely chopped)
Tomatoes-3large (finely chopped)
Ginger-Garlic paste-2tspns
Red Chilli powder-1 tspn
Green Chillies- 2-3nos
Coriander powder- 1 tspn
Salt as per taste
Turmeric powder-1/2 tspn,
Paparika powder-1 tspn
Oil -2 tspn
Coriander leaves-1/2 a bunch (finely chopped)

Method:

  1. Take a pan heat oil in it on medium flame, add onions & slit green chillies to it fry until light brown then add tomatoes fry until tomatoes becomes soft.
  2. Then add all powders to it saute until oil separates add salt to taste,then slit eggs (do not cut fully) add to the masala, stir gently coating the masala into the slit eggs fry for 1min so that masala is well coated on the eggs.
  3. Then remove from the flame, check the salt, garnish it with coriander leaves.

Egg curry is ready to serve with hot Ghee Rice.

Preparation Time: 30 mins.
Cooking Time: 20mins
Serves: 2-3 nos.
