Here's another recipe from me...actually this is my mom's...and a very different kind of stuffed brinjal..its not called nutty for nothing!!!!!

Nutty Brinjal

Ingredients

6 small round brinjals
2 onions grated
6 cloves of garlic
1 inch piece ginger grated
1 tbs. tamarind powder
A piece of jaggery
Red chilli powder as reqd
1 tsp turmeric powder
1 tbs. garam masala powder
1/4 cup powdered peanuts
1/4 cup coconut powder
salt

Method:

  1. Mix all the above ingredients except the brinjal together.
  2. Wash and clean the small round brinjals.
  3. Then make small slits in them.
  4. Next stuff them with the above mixture.
  5. The taste of the above mixture can be altered according to your liking, if u want it sweet, add more jaggery, if u want it more crunchy and nutty, add more powdered peanuts.
  6. In a pressure cooker or pan, heat some oil.
  7. Add mustard, jeera seeds, broken red chillies.
  8. When these begin to splutter, add the stuffed brinjals and any of the remaining masala. Add a little water if required, and cook till it is done.
