How are you? I'am Kavitha, I'am sending this recipe from Sydney. I learnt this dish from my mom. My husband likes this dish a lot, I hope you too will love it. You can prepare this dish with the left over rice and even can put vegetables like potatoes, capsicum, carrot etc into it, just boil the vegetables and put them while frying the onions. Children will love it.

Leftover Rice

Ingredients

1. Rice-1 cup(cooked)
2. Eggs-2
3. Onions-1(finely chopped)
4. Mint leaves
5. 2-3 Green chillies cut into small pieces
6. cinnamon sticks small 2-3
7. cloves 2-3
8. Garam Masala -1/4 of a tsp
9. chinese salt(optional).
10. Oil small amount
11. Salt to taste
12. Zeera
13. Ginger Garlic paste - 1/2 tsp

Method

  1. First beat the eggs into a bowl mix them take an omlette pan and heat it then put some oil into it and them put the battered eggs and before it becomes an omlette keep mixing the mixture so that it forms into small egg pieces, let it fry for some time so that it won't be raw.
  2. Next take a big bowl and put it on the stove and heat it, then put some oil into when the oil is hot first put the zeerz, then the cloves when they start spluttering, then add the onions and fry them till they are golden brown, now put the ginger garlic paste, the chopped green chillies, mint leaves, let it fry for some time, then put the fried egg pieces into the bowl after that put the garam masla powder and the some salt.
  3. Let it fry for about 3-4 mts then now add the cooked rice and mix throughly with some more salt.
