Baked Salmon

Ingredients

Salmon: frozen, skinless & of the shelf.
Mustard seeds: 3/4 tsp.
Jalapeno Pepper: 1 tsp or according to taste.
Turmeric: 1 tsp
Oil: 1/2 tsp (Olive oil preferable).
Lime juice: 2 tbsp.
Salt to taste

Method:

  1. If the salmon is whole, cut 2 pieces from it along the width. Approx. size 8 x 16 cms. Save rest of the salmon. Wash the 2 pieces thoroughly and let the water drain for about 5 minutes.
  2. Grind Mustard seeds until fine. Then add jalapeno pepper and grind again.
  3. To the above mixture add oil, turmeric and mix.
  4. Take 2 pieces of aluminum foil. Approx. size 25 x 25 cms.
  5. Place a piece of the salmon on each foil.
  6. Divide the above paste into 2 equal parts and rub it onto the fish. Take care to cover the whole fish with the paste.
  7. Wrap the foil tightly around the fish and secure the ends so that there are no open ends.
  8. Place the 2 wrapped pieces of Salmon on a baking dish and heat at 425oF for 25 minutes. When done 3/4 remove from foil or open the foil and sprinkle a tbsp of lime juice on each piece and sprinkle salt as desired. Eat hot

If you use Olive oil this recipe will be cholesterol free and Salmon also helps to increase good cholesterol.
