I am Radhika. I hope you enjoyed my Veggie Wrap recipe. Here is another recipe called Veggie-Rice soup. This really comes in handy when you are too bored eating rice or rotis and want to try something simple, but still nutritious and which would be filling also. Veggie-Rice Soup

Ingredients

1. Rice - 1 tbsp.
2. Moong Dhal - 1 tbsp.
3. Channa Dhal - 1 tbsp. [You can also use Split Peas if you don't have Channa Dal].
4. Tuvar Dhal - 1tbsp.
5. Sliced Green Chilies - 3.
6. Vegetables:
Carrot[s] - 1 (chopped)
Shredded Cabbage - 1 tbsp.
Chopped Spinach - 1 tbsp.
Frencn Beans - 1 tbsp. (You can use Frozen beans also).
Peas - 1 tbsp. (optional).
Chopped Cilantro or Mint - 1 tsp.
7. Water - 3 cups.
8. Pepper - 1 tsp.
9. Red-Chili powder - 1 tsp.
10. Butter - 2 tsp.
11. Turmeric - a pinch.
12. Asofeatida [Hing] - a pinch.
13. Salt to taste.
14. Bread Croutons - a handful to garnish.[Optional]

Method

  1. Soak Items 1-4 for about 1/2 hr - 45 mts .
  2. Take a pressure-cooker add the soaked items, along with the vegetables and the Green Chilies to it.
  3. Add 1 cup of water basically this should cover all the ingredients.
  4. Then add a dab of butter or 2 tsp. of it to the mixture.
  5. Close the lid and pressure cook the above ingredients and remove it from the oven after you hear 3 whistles from the pressure-cooker.
  6. While you are waiting to let the cooker to cool down do the following:
    - chop some cilantro, mint if available.
    - On another small sauce-pan, just fry some bread croutons in Ghee and keep it aside.
  7. After the pressure has been released from the cooker, take a soup ladle or a big spoon and add the cooked ingredients to a blender. NOTE: This purely depends on your preference. If you want you can just mash all the cooked items manually and then continue the process from Step 8 (or) just take 1 ladle of the cooked items to blend, leaving some of the cooked items to remain in the soup itself and then continue from Step 8.
  8. Now place the pressure-cooker [without the lid] on the oven, add the blended mixture to it.
  9. Add about 2-3 cups of water (based on how thick or thin you want this soup to be) to the mixture.
  10. Except for Item 10, add Items 8 -14.
  11. Heat it until it becomes very hot (don't let it to overboil).
  12. Add the chopped mint or cilantro leaves.

Serve it in a cereal bowl or a soup bowl, and top the soup with the fried bread croutons. Keep some salt, pepper and butter aside so that they can be added to suit one's taste.
