Cauliflower Kofta Pulav
Ingredients
Basmathi rice - 1 cup
Cauliflower - 1( Large)
Onion - 1 ( Large)
Garlic - 6
Green Chillies - 3
Cashew - 11/2 Table spoon
Bay Leaves - 1
Curry leaves - 2 strips
Coriander leaves - 1 strip
Chana Dhal - 2 Table spoon
Garam masala Powder - 1/4 spoon
Turmeric Powder -1/4 spoon
Red Chilli powder - 1 spoon
Ginger - small Piece
For making Masala Paste:
Dry shredded coconut - 3 Table Spoon
Ginger - 1/2 Inch
Garlic - 5, Green Chillies -4
Dhania - 11/2 Spoon
Red Chilli -5
For making Masala Powder:
Cardamom - 2,
Cloves-1
Bay Leaves -2
Pepper-1/4 spoon
Curry Leaves - 1 strip
Method:
- Soak Basmati rice in water for 10 Min
- Pressure Cook Cauliflower for 4 -5 min
- Then make a Paste out of Cauliflower (by smashing it finely) then add Garam Masala, Turmeric Powder, Channa Dhal, Salt, Onions, Red chilli Powder, Coriander leaves & then make it into small balls & Deep fry the balls in oil.
- Now fry Garlic, onion, Bay leaves & Cashew in Ghee then add the Masala Paste. Fry till raw smell goes, then add Masala Powder to the mixture
Now add the Basmati rice to this mixture fry for few seconds then add
2 cups of water & salt as required. Pressure Cook the rice in Low heat
for 10 minutes.
- After Rice is cooked decorate it with Coriander leaves & Kofta's (Fried Cauliflower Balls) to it.
- Serve Hot with Potato Chips & Raitha.
