Pumpkin Cake
Ingredients
2 cups grated pumpkin (remove the skin & seeds & grate it)
2 cups all purpose flour
11|4 cup sunflower oil
2 full cups sugar
1tsp baking soda
1 tsp salt
1 tsp cinnamon powder
4 eggs
few almonds or cashew (finely chopped)
2 to 3 drops vanilla essence
Method:
- Steam the grated pumpkin for about 5 mins so that it removes the
water in it. Then let it cool.
- Then beat the eggs well in a beater & add sugar to it. Let it beat for
another 3 mins.
- Now seive flour with the baking soda, cinnamon powder & salt.
- Now slowly add the flour to the egg mixture. Mix it.
- Then add the grated pumpkin & oil also. Mix everything well.
- Now add the almonds & vanilla essence. In the meantime preheat the oven to
250 degrees F. Grease the baking tray with little butter and dust it
with a little flour.
- Now add the mixture and bake for about 25mins or
till done. You can check it by pricking on the centre of the cake with
the knife end. You will love this delicious cake.
