Carrot and Dates Cake
Ingredients
Grated Carrot -2 cups
Chopped Dates -1 cup
Chopped Cashew -1 cup
Sugar -2 cups (powdered)
Eggs -3 separated
Maida -2 cups
Refined Oil -1 1/2 cups
Baking powder -1 tsp
Soda bi carb -1 tsp
Vanilla or Elaichi powder 1 tsp
Method:
- Preheat oven to 190oC. Sieve flour together with
baking powder and soda.
- Mix and beat well the powdered sugar and oil. Add
egg yolks & beat well.
- Add chopped dates, cashews and grated carrot.
- Add maida and mix well. Add Elaichi powder.
- Beat egg whites stiff& fold into carrot mixture.
- .Place in a greased and dusted cake tin and bake
until done.
