Hi!
I am Gayathri from Bahrain. Pura is a Rajsathani version of malpua but it is made slightly differently. Served with cream or garnished with pista, it is an all time favourite.

Pura

Ingredients

Sugar : 1 cup
Wheat flour : 1- 1/2 cups
Youghurt - 4 tsp
Whole Pepper corns - 10
Milk -3/4 cup
Water-3/4 cup
Pure Vegetable Ghee-2 cups for deep frying

Method:

  1. Make a batter of all these dry ingredients and the yoghurt, using milk and water till it is thick and of pouring consistency, similar to pancake or dosa batter. Whip till smooth. Add the 10 peppercorns. Keep aside and allow it to rise for 2 hours.
  2. Heat pure vegetable ghee on a medium flame. Drop large ladlesful in to the ghee to form circles of 6 to 8 inches. Typically the dough will sink and line the bottom of the kadai and rise up in the shap of a disc. Fry till golden colour.
  3. Drain and patt off the ghee.
  4. Serve with Cream or garnished with pista.
