Mushroom Curry

Ingredients

White Button Mushrooms 1 pocket
Onions 2 med size
Tomatoes 2 big ones
Green Chillies 1
Garlic 2 cloves,peeled
Ginger 1 small piece
Cinnamon 1 no.
Cloves 2-3 nos.
Cumin Seeds 1 pinch
Asafoetida 1 small pinch
Turmeric powder 1 pinch
Red Chilli powder 1 tsp
Dhaniya Powder 1 tsp
Garam masala 1 tsp
Coconut Milk as per taste
Cashewnuts 9-10 nos. roasted

Coriander leaves

Method:

  1. Wash and lenghtwise cut mushrooms into pieces.
  2. Heat little oil in a pan and fry the mushrooms for 2-3 min. or until they turn soft. Keep aside.
  3. Lenghtwise cut and fry onions till golden brown , keep aside to cool and also fry until tender, the washed and cut tomatoes. Keep them aside too.
  4. Grind fried onions to a paste and keep Next grind tomatoes , ginger, garlic and 4-5 cashews to a paste as well.
  5. Heat 2 tbsp oil in a pan and add cinnamon & cloves (coarsely ground). Next add cumin seeds and asafoetida.
  6. Add onion paste fry little then add tomato and ginger garlic paste.
  7. Add turmeric, dhaniya and chilli powder, stir for a while on a medium flame until it gives the aroma then add garam masala and salt as per the taste.
  8. Add about 3/4th cup of water , cover and let it cook.
  9. Add fried mushrooms Bring it to a boil and Add coconut milk, cover and cook for a while and enjoy the curry with roti or veg. rice or maybe with Mushroom Pulav too!!!! Decorate it with coarsely ground cashewnuts and finely chopped coriander!!
