Hi!
Here's an easy to prepare baked dish from me. I personally love this and go on an uncontrollable binge when i prepare this!!!!

Eggplant Parmesan

Ingredients

1 big Eggplant
1 bottle Spaggetti Sauce
2 packets Parmesan Cheese
2 Eggs
1/2 cup Bread Crumbs
3/4 cup Allpurpose Flour
Salt to taste
1 tbs Red Chilli powder
1 tsp Pepper powder
Olive Oil

Method:

  1. Cut the eggplant into oval slices. Next sprinkle some salt on them and set them aside for about 10 minutes.
  2. In another vessel, break the two eggs, mix in red chilli powder, pepper powder. Mix the all purpose flour with the bread crumbs and keep it aside.
  3. Dip the eggplant slices in this egg mixture and then coat it in the all purpose flour and bread crumbs mixture.
  4. Heat olive oil in a pan and when its hot, put in the coated eggplant slices in this hot oil. Shallow fry this for some time and then keep it aside.
  5. Take a baking tray and arrange the fried brinjal slices in this. Next coat this with the spagetti sauce. Finally cover it with the grated parmesan cheese.
  6. Heat the oven to 350 degrees and bake this dish for about 10 minutes. Once the cheese has all melted, take it out of the oven and let it cool. Eggplant parmesan is ready to serve!!!!

Note: If you like it more rich. Then you can layer the eggplant and cheese,..make two layers.
