I am Kamakshi Mahadevan from SF, California. I love to try a variety of nutritious, low fat dishes. My husband enjoys my cooking and encourages me a lot!! This is a tasty snack that is easy to make too. Hope you like it!! - Kamakshi (kamakshi@goplay.com

Mushroom Rolls

Ingredients

Bread (white/rye) - 1 loaf
Mushrooms - 1 pack, chopped
Onions - 1 big, choped
Green chillies - 4 or 5, minced
Cumin seeds - 1 tsp
Salt - as per taste
Turmeric powder - a pinch
Oil - to saute

Method:

  1. Heat oil in a pan, add the cumin seeds, chillies and the onions.
  2. Fry the onions till they are translucent and then add the mushrooms.
  3. Add salt and turmeric and keep frying till the mushrooms are cooked.
  4. Meanwhile, take water in a shallow plate and dip each bread slice and remove quickly, taking care that the bread slices don't get too soggy. Squeeze out the water and arrange the bread slices on a baking sheet coated with cooking spray.
  5. Spoon out the filling on each of the slices and roll each slice, sealing the ends with water.
  6. Bake the slices in a 350F oven for about 10 minutes or till the bread slices turn golden brown.
  7. Serve hot with tomato ketchup.

Variation: You can make your own filling and prepare the rolls as above. Just make sure the filling is not too watery as it may turn the bread soggy.
