Hi Bawarchi, This is Courtney from Ireland at kirshner@esatclear. i.e. I'm a writer and I love to cook. Sometimes I have a lot of time and sometimes I like an easy meal, so the recipes here are great. Here is an easy, tasty one that my family loves.

Satay Mushrooms with Tofu

Ingredients

1 cup boiled Noodles
1 cup powdered Raw Peanuts
4 dried Red Chillies (or more if you like it
hotter)
Tofu cut into cubes
1 tsp minced Garlic
1 package small white Mushrooms, chopped
1 tsp Brown Sugar
1/4 cup Soya Sauce
2 tbsp Rice Vinegar
1 bunch Green Onions/ scallions chopped
Salt to taste

Method:

  1. Fry green onions till crisp in pan.
  2. Add the mushrooms and cook till soft.
  3. In the meantime grind the raw peanuts and chillies. Add this mixture to the pan along with the soya sauce, brown sugar and vinegar. Cook till it blends well. Add salt.
  4. Add the tofu till warmed through then add the cooked noodles, mix it well and serve hot. Enjoy!
