Date and Walnut Cake
Ingredients
100 gms Flour (maida or all-purpose flour)
125 gms Butter (or margarine
25 gms Semolina
5-6 Eggs
1/ 2 cup Rum
100 gms Dates
8-10 Walnuts
125 gms Sugar
One fourth cup Milk
1 tsp Baking powder
1 tsp Vanilla Essence
Method:
- Cut each Date into 3-4 pieces and soak the Dates in the rum for a couple of hours or a few days.
- Break the walnuts into small pieces.
- Beat the butter. Add sugar and beat till nice and smooth. Add egg yolks and continue beating.
- Put the dates and walnuts in the flour and mix. Mix in the flour slowly in the butter mixture and keep stiring. Continue stiring as you put the semolina.
- Slowly fold the stifly beaten egg whites into the mixture. You can mix gently with your hands to feel and eliminate any lumps.
- Add the vanilla essence. Add the milk. The mixture should be thick but when the mixing bowl is tilted, some of the mixture should flow down into the cake mould, if it doesn't, add some more milk to bring it to the right consistency.
- Rub the cake moulds with some butter and dust with flour. Pour the mixture into cake moulds. Preheat oven to 375 deg Fahrenheit. Ten minutes after keeping the cake in the oven lower the temperature to 300-325. Bake for 40-50 min.
