Carrot Salad

Ingredients

4-5 Carrots washed and grated finely.
1-2 Green Chillies (or as per your taste.) cut into pieces
1/2 cup roasted and coarsely ground Peanut (groundnut) powder
Finely cut Coriander Leaves for garnishing.
2-3 tablespoons of Lemon Juice
1/2 tsp Sugar
Salt as per taste.
1/2 tsp Veg. Oil
1 tsp Mustard seeds
4-5 Curry Leaves
1/2 tsp Hing

Method:

  1. Mix carrots, lemon juice, sugar, green chillies, coriander leaves, peanut powder.
  2. Season with mustard seeds, hing, curry leaves in oil. Let it cool in fridge. Add salt before serving.

Note: You can prepare similar type of salad with Beetroot and Cucumber.
