I am Barnika. "DALMA" is typical Oriya recipe from the state of Orissa, which is located in the eastern part of India. The people of Orissa like this item of food very much with steam rice and all the Oriya people love to eat this in their principal meal. The nutrient value of this item is very high because, most of the ingredients are green vegetables and dal which rich in protein. There are verities of "Dalma" from different parts of Orissa. The ingredients differ from one to the other.

Dalma (Oriya)

Ingredients

1. 3/4 cup Toor dal (Arar Dal)
2. 1 tsp Ghee or Oil
3. 1 peeled Potato and cut into large pieces
4. 150 gm yellow Pumkin cut into large pieces
5. 1 large Brinjal cut into medium size pieces
6. 1 green Banana cut into medium size pieces
7. 1 small Papaya cut into medium size pieces
8. 2 tsp of grated Coconut
9. 4 dried Red Chillies
10. 1 tbs of Ginger minced
11. 1 tbs Turmeric
12. 1 tsp of Pancha-phutana (Cumin, Mustard, Fennel, Fenu greek, Kala Jeera) seed
13. 1/2 tsp Sugar
14. 2 tsp fried Cumin and Red Chilli powder
15. Salt to taste

Method:

  1. Dry roast 1 tsp of cumin and red chilli in a pan and grind it properly and leave it aside.
  2. Boil 4 cups of water and add both dal (toor and chana), coconut, salt, minced ginger, turmeric and sugar and leave it until Dal is half cooked.
  3. Add all vegetables viz. potato, banana, pumkin, brinjal and papaya and cook until vegetables become soft and tender.
  4. Fry the panch-phutana until it crackle and then add it to the cooked dal.
  5. Sprinkle roasted cumin and chilli powder.
  6. Decorate with grated coriander leaves (optional).
  7. Serve with hot steam Rice.
