Hi good food lovers,
Me Jasmine (Proud Indian), at present in U.A.E, though I started cooking only after getting married I developed interest as years passed by, my hubby loves home made food and specially M'lore dishes which his mom use to make for him. I keep collecting recipes from my in-laws (cause I am not from M'lore) & experiment new dishes & this one I tried it was excellent, so I thought that let me share with you all who love cooking. Mandas can be made of Jackfruit, pumpkin etc, same ingredients can be used and only you can replace cucumber with other fruits.

Cucumber Mandas

Ingredients

200 gms Boiled Rice
50 gms Raw rice
250 gms Jaggery
250 gms Cucumber
1/2 Coconut
4-5 Cardamom powdered

Method:

  1. Soak the rice overnight and grind it the following day into a thick batter not watery but semi solid wet (like we do for Idli). When the rice has ground add jaggery and grated cucumber and grated coconut and grind till well blend. Add Cardamom and just a pinch of salt (optional).
  2. Remove the batter, mix a tablespoon of pure ghee and either steam or bake it till done.
