Potato Stew

Ingredients

1) Potatoes- 4 big ones
2) Oil- 2 tbsps
3) Green chillies - 4
4) Coconut milk -1 can
5) Salt to taste
6) Onion - 1 big size

Method:

  1. Cook potatoes well. Peel skin and mash it.
  2. Cut onions and green chillies (vertically)
  3. In a pan (medium flame), fry onions and green chillies.
  4. Add the mashed potatoes and cook for 3 to 4 minutes.
  5. Add 1/4 can of coconut milk. Add salt as per taste. Mix well and allow to boil for 5 minutes.
  6. Now add the remaining coconut milk and boil again for 5 minutes. Yummy Stew ready. Serve with rice/chapatti. Enjoy!
