French Mushroom Soup

Ingredients

1 lb Button Mushrooms chopped
1/2 lb Shetake Mushrooms chopped
1 large Carrot finely diced
2 stems Celery finely diced
1 Red Onion finely chopped
3 petals Garlic finely diced
2 tbsp Olive Oil or Butter
1 pint heavy Cream
1/2 tsp ground Black Pepper
Salt to taste

Method:

  1. Heat olive oil in a skillet.
  2. Add garlic, onion, carrot, celery and saute well till it leaves oil. Then add mushrooms and cook them well.
  3. Put the cooked mixture in a grinder and make a puree adding heavy cream. Bring the puree to a boil. Add the seasoning and serve hot.
