My name is Bala Sreenivasan. This is my first contribution to bawarchi.com. This site is indeed remarkable and has done wonders to my cooking. This version of Pulav is very easy to make and has excellent flavour. Although the title is peas & carrots Pulav, you can use other vegetables like beans and potato also. Spicy Peas and Carrot Pulav

Ingredients

1) Onion (red) - 1 (Sliced vertically)
2) Green Chillies - 3
3) Peas - 1 cup
4) Carrot - 3 to 4 cut into small cubes

Spices:

1) Ginger - according to taste
2) Cloves -5
3) Cardamom -5
4) Cilantro - a few leaves
5) Chilli powder - 1/2 to 1 tspn.

Other:

1) Rice (Basmati or long grain) -2 cups
2) Butter - 3 tablespoon.(If you are diet conscious please use vegetable =
oil)
3) Salt (according to taste)

Method:

  1. Grind the ginger, cardamom and cloves to a fine paste adding a little water.
  2. Melt the butter or heat the vegetable oil.
  3. Add onions and fry for 3-4 minutes.
  4. Add the paste and fry a little more.
  5. Add cilantro leaves.
  6. Add the vegetables and fry again for some time.
  7. Add the rice and again keep stirring until the rice gets crispy.
  8. Add salt and chilli powder.
  9. Add exactly 2 and 3/4 cups water.
  10. Pressure cook for 8-10 minutes. (dont let it cook too long).
  11. Serve hot with Raita.
