I'm Ashley from Edinburgh in Scotland. I would like to share with you one of my favourite recipes. Ofcourse I did learn it from my Mom. I'm sure you enjoy this!!

Caramel Pudding

Ingredients

For pudding:

Milk 1/2 litre
Sugar 8 - 10 tablespoons ( depends on you )
Egg 5
Vanilla essence 4 - 5 drops
Butter for greasing

For caramel syrup:

Sugar 6 -7 tablespoons
Water half a glass

Method:

  1. Pre- heat the oven in 180 degrees.
  2. Grease a medium size oven proof bowl and keep it aside.
  3. Beat the eggs one after another adding vanilla essence, add sugar, milk as well. Keep this aside.
  4. In a heavybased saucepan heat the sugar (for the syrup). When it is fully melted and becomes brownish pour water and stir it continuously until it gets thickened. Pour this to the greased bowl.
  5. Now pour the custard mix carefully on top of the caramel syrup and bake it in the pre - heated oven for 30 minutes or till it is cooked. Insert a skewer and understand whether it is cooked or not.
  6. When it gets cooled refrigerate it for 1 hour before serving.

Serves 6-7
