Baingan Rasse Walla

Ingredients

Eggplant / large baingans 1/2 kg - chop it into small pieces
Coconut Milk 1-1/2 cup
Onions 2 medium sizes chopped
Ginger / Garlic paste 1 tsp
Green Coriander leaves Chopped
Curry leaves
Green Chilli (optional)
Oil

Masala:

Salt to taste
Mustard Seeds 1 tsp
Red Chilli powder As per your requirement
Turmeric powder 1/2 tsp
Coriander powder 1 tsp
Garam masala 1/2 tsp
Mango powder 1 tsp

Method:

  1. Heat oil & add ginger, garlic and chopped onions fry till brown.
  2. Add to it coriander leaves & green chilli and fry for few seconds.
  3. Allow the above to cool and grind it to a paste along with the coconut milk in the blender.
  4. Then again pour 1 tsp of oil, heat it and add mustard seeds.
  5. Then add all the masala, curry leaves and the grinded paste cook for few seconds.
  6. Add water as required and add egg plant / baingans. Cook till the gravy is thickened.
  7. Serve with hot plain rice.
