Baingan Masala

Ingredients

Brinjal 250 gm
Coriander seeds 30 gms
Groundnut seeds 25 gms
Sesame seeds 15 gms
Curry leaves little
Turmeric 1 teaspoon
Salt to taste
Oil for frying brinjals
Asafoetida 2-3 gms (or depending on the liking)
Red Chilli Powder According to taste
Mustard and Cumin seeds for seasoning.

Method:

  1. Roast Coriander seeds, groundnut seeds and sesame seeds separately and powder them in a mixer separately and mix the three powders together in a bowl or plate and keep it aside.
  2. Cut brinjal in a required shape and size.
  3. Heat oil in a pan and add little mustard seeds and cumin seeds and asafoetida powder. Once the mustard splutters, add turmeric powder, curry leaves and cut brinjals, slat and mix thoroughly. Allow it to cook for 10-15 min. See that the oil forms a layer to the sides of the pan. Once brinjals are cooked, add the powder of coriander, groundnut and sesame seeds and mix it evenly to spread to all the brinjals.

It is protein rich with powders and can be had with rice or chapatis. This powder can also be used for making stuffed brinjals.
