Nankattai

Ingredients

Maida - 250 gm
Sugar - 250 gm
Elaichi - 20
Milk Powder - 50 gm
Ghee or Vanaspathi - 125 gm
Cooking Soda - 1 tsp

Method:

  1. Roughly powder sugar along with elaichi. Mix it into maida and milk powder. Mix well.
  2. To the ghee add cooking soda and rub well with your palm on a flat surface till it becomes white, smooth, soft and semi liquid like consistency.
  3. Now add the dry ingredient mixture to the above mixture. Mix well.
  4. Run this mixture in a food processor till it becomes soft, smooth dough. If you find the mixture to be hard, then add little extra maida to adjust the firmness.
  5. Shape it into flat balls and bake in oven at 1500 C for 20 min.

Note: The amount of ghee or vanaspathi required usually depends on the liquid absorbing factor of maida. Some quality maida absorbs more and some others absorb little. So add ghee accordingly.
