I am Roopa Rao. I would like to share one of my favourite recipe learnt from one of my friends from South Africa. I hope you all enjoy it. Banana Kabbabs

Ingredients

Green Bananas 1
Onions 1
Green /Red/Yellow pepper 1
Mint Leaves 4 tbsp
Parsley leaves 4 tbsp
Origanum 4 tbsp
Coriander leaves 4 tbsp
Salt to taste
Green Chillies 3-4
Egg (beaten) 1
Bread Crumbs 1 cup
Oil for frying

Method:

  1. Grate the bananas and boil them in salt water for about 1-2 min.
  2. Chop & mix coriander leaves, parsley, mint, origanum, peppers, onions & green chillies with the salt.
  3. To this add the boiled bananas & mix them.
  4. Make small balls & roll them in the egg mix & cover these with the bread crumbs .
  5. Referigerate in for about 45 min.
  6. Fry untill they are golden brown & serve hot.

Many other recipes can be made with the above ingredients. A few are mentioned below:

BANANA PAKODAS:

All ingredients execpt egg and bread crumbs are required . You also need besan & rice flour. Follow the instructions 1,2,3. Next to this mixture add besan (1/2 cup) and rice flour (3tbsp) and mix all.

Make small balls & pat them with your fingers & fry them till they turn golden brown. Serve hot.

Apart from these, curries, uppmas can also be made.

For Curry:

Ingredients:

Oil 3 tbsp
Mustard seeds 1 tsp
Channa dal 2 tsp
Urad dal 2 tsp
Grated Coconut 1/4 cup

Method:

  1. Follow the instructions from 1 to 3. Add raw bananas (no need to boil)
  2. Heat oil in the pan . Add mustard seeds to it. When it crackles add both dals & fry them till they are golden brown.
  3. Add the banana mixture to it & fry with covered pan till they are done. Add coconut to it & serve accompanied with roti or rice.
