Hello,
My name is Vijaya and I live in Tokyo. I came to know of this site from my sister who has contributed to this site. The site is wonderful for new recipe finders. This is the first time I am contributing. Its very easy and less time consuming as I prepare it in the mornings to take to office for breakfast/lunch. You are most welcome to mail me at vijjain@hotmail.com for any queries or feedback (negative or positive - I hope its the latter)

Vegetable Stuffed Toast Sandwiches

Ingredients

Vegetables :

3-4 Medium sized Potatoes
2 Capsicums
1 Onion
2 Carrots
3 Green Chillies

Masalas :-

Garam Masala - 1/2 tbsp
Pepper powder - 1 tbsp
chilli powder - 1/4 tbsp
Salt to taste
(The measurements are approximate so please apply as per your taste)

Method:

  1. Boil the potatoes.
  2. Cut the remaining vegetables finely.
  3. Now take the boiled potatoes and mash it with the other vegetables well and add all the masalas and again mash it well by hand.
  4. Take 2 slices of bread, cut sides of the bread then apply some butter /margerine on both and put the mixture on one slice of bread, cover it with the other slice.
  5. Toast it in the bread toaster. (in my case however I dont toast it due to lack of time but that also tastes good!!!)

There!! now the sandwiches are ready to eat with Tomato Sauce or Chutney. You must be smacking your lips by now. Enjoy making them.
