Hi,
My name is Shanti Maiti, I live here in Los Angeles with my husband. I am a MBA persuing my further studies in software here in local college. During spare time I like to try new dishes as my husband loves to eat different delicious dishes. Somebody well said that the way to man's heart is through his stomach. I followed it and I am a successful wife. I want to share one of my personal recipe it's called YUMMY EGG CURRY.

Egg Curry

Ingredients

4 Eggs boiled
1 medium size Potato cubed
1/2 spoon Turmeric
1/2 spoon Chilli powder
3-4 Dry Red Chillies
As per taste Salt
1 medium size Onion chopped
2 tbl spoon yogurt
2 tbl spoon Coconut grated
4-5 Pepper
1 Cardamom
1/2 inch Cinnamon stick
10 strands of Coriander leaves

Method:

  1. Fry the boiled eggs slitely till outer surface is golden brown keep aside.
  2. Fry cubed potatoes till golden brown and keep aside.
  3. Fry choped onions and grind with yogurt, coconut, pepper, cardamom, cinnamon sticks, coriander leaves to a corse (or as per liking) paste.
  4. In the same pan put little oil, after the oil heats up, put red whole chillies.
  5. Put the ground paste in the pan, add termeric, chilli power, salt and fry for 3-4 minutes.
  6. Add the fried potatoes and eggs and fry for another 3-4 minutes, once the gravy starts smelling add enough water to make a thick curry and boil for another 3-4 minutes.
  7. Serve hot with Rice or Paratas.

Hints: Instead of eggs or potatoes you can add any vegetables it will taste quite delicious. I tried with bell pepper, white pumpkin. It taste quite well.
