Fried Rice

Ingredients

Basmati Rice - 350 grams
Coconut - 1
Cloves - 5
Cinnamon - 1
Cardamom - 5
Chopped Coriander leaves - 1 cup
Cashewnuts - 10
Garlic - 15 pearls
Ginger - 1 small piece
Ghee - 50 grams
Green Chillies - 50 grams

Method:

  1. Cut the onion into long pieces and chop tomatoes.
  2. Grate the coconut and keep it in 3 cups of warm water for 15 minutes and cool it. Grind the coconut with water and squeeze the milk.
  3. Grind garlic, ginger, green chillies and coriander leaves separately in a mixie.
  4. Wash the rice and drain the water.
  5. In a pressure cooker, pour ghee and heat it. Fry cashewnuts, cinnamon and cardamom. Then fry garlic paste, ginger paste, ground coriander leaves and onion. When the onions turn light brown, add tomatoes and fry. Add rice and 400 ml of coconut milk. Cook the rice for 10 minutes.
  6. Garnish with coriander leaves and pudina leaves.
