Shajahani Kurma

Ingredients

1. Curd-6 cups

2.Dry masala:-

Cloves-10
Cinnamon-3"
Red chilli-3
Green Cardamom-10
Poppy Seed- 4.5 tsp
Mace- a few
Nutmeg-1
All this should be powdered finely.

3. Wet Masala:-

Ginger-1/2"
Soaked Apricots-10
Coconut-1/2
Almonds-12
Pista-12
Jeera powder-1/2 tsp
Turmeric powder-1/2 tsp
Pepper powder-1/2 tsp
Salt-
All these should be made into a fine paste.

4. Lamb cubes- 1 kg
5. Saffron-
6. Oil-1 cup
7. Butter-50 g
8. Onions-2 (sliced)
9. Coriander leaves-

Method

  1. Take curd in a muslin cloth & hang it in fridge for 3 hrs.
  2. Mix together the wet masala, lamb, hung curd & marinate it in room temperature for 2 hrs.
  3. Soak saffron in water & crush it.
  4. Heat a pan. Add oil & butter. Then add sliced onion & fry.
  5. Add the marinated meat & dry masala. Cover the pan & cook for 1 hr.
  6. Remove from the fire & add saffron. Decorate with chopped coriander leaves.
