Hi! My name is Chetna and I very much enjoy this site because there are so many easy recipes here. I find comfort in the fact that there are many different types of food recipes contributed by regular folks. The recipes are very user friendly and not at all intimidating to a novice cook. There are so many things I didn't think I could make before I found this site. So thanks for giving me the confidence to cook! Since so many of you have helped me out, I hope this simple recipe for a Taco Salad helps you out some night.)

Easy Taco Salad
Ingredients
15 oz. can of Kidney Beans
1 cup Salsa (hot or mild salsa depending on your palate)
1 8 oz. package of grated Mild Cheddar Cheese
1/2 Onion chopped finely
1/2 Green Bell Pepper chopped finely
(For colour - you can add bit of Red or Yellow Bell Peppers if you choose -
otherwise omit)
5 or 6 Lettuce Leaves cut into small pieces
1 Tomato chopped
4 or 5 Taco Shells - crumbled (can substitute corn tortilla chips here also)
Method:
- Drain and wash the Kidney Beans. Mash them with a spatula to make a bean paste. To the bean paste add the salsa to create a pinkish looking mixture.
- Place half of the bean mixture on a microwave proof serving plate.
- Sprinkle half of the onion, peppers, and cheese.
- Microwave on high for 3 minutes or until the cheese melts.
- Garnish with lettuce, tomatoes, and the crushed taco shells (or tortilla
chips). Repeat the same process in a second plate! Takes less than 15 minutes and Makes two plate fulls. Enjoy for lunch or dinner!!
