I am Diwakar. This is a very typically Maharatrian preparation, being passed from mother to daughter and down the line. I have learnt it from my mother and my husband love it.

Moong (Sprouted Moong) Birdhe

Ingredients

Sprouted Moong 250 gms
Garlic paste 2 tsp
Red Chilly powder 1 tsp
Turmeric powder 1/4 tsp
Finely chopped Onion 150 gms
Coconut Milk of 1 coconut (Freshly made)
Tamarind pulp 4 tsp (thick)
Coriander (By choice)
Salt to taste
Oil as needed

Method:

  1. Peel the sprouted moong.
  2. Mix the moong, garlic paste, red chilly powder, turmeric powder, and onion together in a bowl. Do not add salt.
  3. Heat oil in and deep pan. Add the above mixture in and saute on a low flame, till the moong softens, but do not cook completely.
  4. Now, add the coconut milk, tamarind pulp and salt. Bring to boil and cook the moong completely. Add coriander and bring to boil for another two minutes.
  5. Serve hot with Chapatis and Rice.
