Today, I am sharing my recipe of Bean filled mexican taco. It's an easy and delicious dish with a total making time of maximum 5 minutes. Do try it and send me the feedback at lata_g@hotmail.com

Mexican Tacos

Ingredients

For Taco Shells:

Get Taco Shells from the market

For Bean Filling:

1 can of Goya/Progresso Red Kidney Beans (rajma)
Salt
Dry Cilantro Leaves
Red Chilli (mirchi) powder
1 medium / big Onion chopped and made to a paste in the mixie
3-4 teaspoons Oil

For Topping:

Tomato finely chopped
Lettuce chopped
Salsa dip
Hot Taco Sauce (if you like it hot and spicy )
Grated Cheddar Cheese

Method:

For Bean Filling:

  1. Take the rajma beans in a microwavable container. Add lots of water i.e. soak the beans in water and microwave for around 7 minutes.
  2. Drain the water and mash the beans thoroughly. Now add some salt, chilli powder, dry cilantro leaves as per taste. Mix well.
  3. Take some oil in a frying pan. Add the onion paste and fry for around 1-2 minutes. Add this paste to the mixture of beans and spices.

To serve:

Take the taco shells and heat 2 at a time for 30 seconds in the microwave. Put a tbsp. of bean filling inside the taco. Spread taco sauce, lettuce, grated cheese, chopped tomato and then the salsa.

Making time: maximum 5 minutes.
