Hi,
I am Vaijayanti Tamhankar from Adelaide. Here is a recipe for American Chopsuey...this makes a great meal by itself. Thank you folks for the wonderful response to my previous recipes Jhatpat Broccoli, Layered Potato Surprise and Easy Carrot Cake.

American Chopsuey

Ingredients

2 packs of crispy Chinese Noodles
1 to 2 cups of mixed cut veggies like Carrot, Broccoli,Snow Peas, Cabbage, Mushrooms, Baby Corn etc (use a veg. stir-fry pack if available)
4-5 Red Chillies cut vertically (adjust this amount depending on how hot you want the taste to be)
1 large Onion cut into thin strips
2 teaspoons of Ginger-Garlic paste
2 teaspoons Peanut Butter
2 tablespoons Soya Sauce
3 tablespoons of Chilli Sauce
2/3 a cup of Tomato Puree
A pinch of White Pepper
2 teaspoons of Sugar
Ajinomoto to taste (salt will do fine if ajinomoto is not available)
4-5 tablespoons Oil for seasoning, more oil for frying the noodles

Method:

  1. Steam the vegetables till they lose their rawness.
  2. Heat the oil in a wok and add the onions. Fry till translucent.
  3. Now add the ginger-garlic paste, chillies and fry well again.
  4. Add the steamed vegetables and mix well.
  5. Add the tomato puree, soya sauce, chilli sauce, peanut butter, white pepper and salt or ajinomoto and sugar. Mix well and allow to simmer for sometime.
  6. Now cook the noodles per instructions and drain completely to get rid of any extra water. Allow to cool.
  7. Fry the noodles till they are crisp in oil. Mix these crispy fried noodles with the vegetable gravy.
  8. Serve hot.

If you find the gravy too watery for your liking, mix a spoonful of corn flour in about 3 spoonfuls of water and add this to the steamed vegetables when the gravy is still simmering.
