Rich Fruit Cake

Ingredients

Butter 180 gms
Sugar 230 gms
Baking Powder 1/2 Tsp
Mixed Fruit (TuttiFruti-available during christmas in stores) 150 gms
Milk 30 ml
Self Rising Flour or All Purpose Flour 230 gms
Eggs 4
Vanilla Essence 1/2 Tsp
Almonds 50 gms

Method:

  1. Blanch almonds and chop. Mix most part of fruit with almonds.
  2. Beat eggs with vanilla essence and set aside.
  3. Cream butter and sugar and add the beaten eggs gradually.
  4. Fold in half the flour and fruit mixture into creamed mixture, mix throughly. Fold in the remaining flour and fruits. Add milk to get a dropping consistency.
  5. Grease and flour a 8 inch baking tray and pour in the cake mixture. You can jab the remaining fruit and chopped almonds on top.
  6. Bake at 350 degree F for about 40 mins. After that, put off the oven and leave it inside for approx 10 mins.
  7. Remove from oven and place it on a wire rack to cool.
