I am FahimYounus living in Riyadh with my husband my favourite web site Bawarchi. I am seeing daily but this special recipe I did not see so I want to share this with you. My previous recipes are Damki Bhendi, Hyderabad khorma, Hyderabadi Kofta curry, Hyderabad Biryani, Chicken 65.

Hyderabadi Bagare Baigan

Ingredients

1. Brinjal - 1/2 Kg
2. Cumin seeds - 3/4 teaspoon
3. Coconut powder - 4 table spoonful
4. Jeera whole - 1/4 teaspoon
5. Groundnut powder - 3 table spoonful
6. Til powder - 5 tablespoonful
7. Jeera powder - 1 table spoonful
8. Dhaniya powder - 2 tablespoonful
9. Turmeric powder - 1/4 tsp
10. Green Chilli - 2 to 3 cut slantly
11. Coriander leaves - 5 to 6 sticks
12. Ginger Garlic paste - 1-1/2 table spoonful
13. Tamrind - soak 5-6 pieces in 1 cup water for 20 minutes. Mash it - cup of this tamarind and water
14. Oil - 4 to 5 tablespoonful

Method:

  1. Grind all the coconut, Groundnut, Til, Jeera, Dhaniya into paste. Mix red chilli powder, turmeric powder, ginger garlic paste with this paste and also add salt according to your taste. Then keep aside.
  2. Now take Brinjal wash then cut it into 4 half pieces.
  3. Soak them in water put little salt in that water for few minutes.
  4. Now keep cooker on medium flame.
  5. Pour oil. When the oil get heat put cumin seeds and zeera whole then add the Brinjal after that put all the grinded paste with little water. Still the whole thing for 5 minutes or till it leaves the oil from the sides. Then close the lid of pressure cooker for 1 or 2 whistle then take out from the flame.
  6. Tasty Bagare baingan is ready to serve this curry with Biryani or plain rice.
