Hi,
My name is Pinky Ray. My favourite pass time is cooking. My mother and grandmother has been the key influential figures to introduce me to cooking. I not only like making Bengali foods but foods from all over the world. I am in US for 4 yrs and bawarchi.com has been source of inspiration and a big help out from time to time. I like to share a quick bengali sandwich recipe which is good for brunch time & a good travel food item.

Vegetable Sandwiches

Ingredients

1 cup of boiled vegetables (Potatoes, Cauliflower, Carrots, Peas, Beans, Beets)
4 slices of White Bread or bread of one's choice
2 TBS Coriander Chutney
1 Tsp Lime Juice
Chilli Powder according to taste
1/2 Tsp Garam Masala powder
1/2 Tsp of Roasted Jeera Powder
Salt and Sugar to taste

Coriander Chutney: Coriander Chutney can be made by grinding 1 sprig of coriander, 1 inch ginger, some touch of lime juice and 2 chillies. While grinding one should avoid using too much water. This chutney can be easily stored for 1 week.

Roasted Jeera Powder: Heat a pan on high. Roast the jeera until it gives out roasted smell. Let it cool and then grind.

Method:

  1. Drain the vegetables properly. Mash the vegetables along with salt, chilli powder, garam masala powder & jeera powder.
  2. Add the coriander chutney, lime juice, salt and sugar to taste and mix it.
  3. Butter the slices of bread lightly.
  4. Layer the mixture on two slices of bread and cover it with the other 2 slices of bread. Lightly toast the sandwiches in the sandwich maker or in the oven till the sandwiches are lightly browned.

The mixture can be made ahead of time. Bon Appetite.
