This is Sandhya again with my second contribution to Bawarchi...and this time I bring "Nutella Biryani". I give it that name because the Soya nuggets that I use in this recipe are Nutella brand...its definitely one of my favourite kind of rice.... so lets start.

Nutella Biryani

Ingredients

20 Soya Nuggets (soaked in hot water during preperation time)
1 cup Basmati Rice (soaked for 1 hour in hot water washed and well drained)
1/2 cup Curd (well beaten)
1 medium Onion finely chopped
2 cups of Water
2 tbsp Desi Ghee

For Seasoning:

2 tsp Tandoori Masala (better to use paste, if not then add a few drops of water to the powder to make it a paste)
5 Cloves
5 Whole Pepper Corns
2 Cardamom coarsely ground (with skin)
1 tsp Kesar Food Color or or 5-6; kesar soaked in a few drops of water
1 tsp of Red Chilly powder
6 Cashews cut into half
6 Rasins
Salt to taste

For Garnishing:

Chopped Coriander, deep fried Onion strips and a Tomato Rose Flower.

Method:

  1. During preperation time soak rice and soya nuggets for the desired time.
  2. In a saucepan or kadai heat 1 tbs of ghee and add the finely chopped onion, fry the onion till golden brown.
  3. To the onion add the pre-soaked Soya nuggets and fry till the sizzling stops, now add the tandoori masala and red chilly powder and fry till the mixture blends well with the Soya,  add salt and finally add curd to the soya and keep this mixture off the gas at a side for the moment.
  4. While doing the Soya mixture, simultaneously you can heat another vessel and add the remaining tbs of ghee add the other dry seasoning like Cardomon, cloves and pepper corn, cashews and raisins, add presoaked and drained basmati rice and fry the rice till each grain has been coated with ghee.
  5. Add 2 cups of water, salt and cook the rice till all the water has been drained out.
  6. Grease a squarish baking dish and set the oven temperature to 350 F.
  7. Layer the Rice and Soya Mixture one after the other starting and ending with Rice and sprinkle the food color or kesar on every layer of the rice. 
  8. Cover this dish with a lid and seal the ends with aluminium foil and bake it in the oven for 15-20 mins or till the rice is completely cooked. This procedure can be done without the oven in a pressure cooker for one whistle.
  9. Finally garnish the Biryani with Coriander, a tomato flower and some fried onions strips.
  10. Serve this delecious briyani with Papad and Raita or even any vege of your choice.
