Mixed Masala Pulav

Ingredients

2 cups Basmati Rice
500 gms. of mixed veg. like Potatoes, French Beans, Carrots, Peas & Califlower
2 to 4 Cloves
2 to 4 Pepper
2 to 4 Cardamoms
1 to 2 Bay Leaves
1 inch of Cinnamon stic, broken into bits
2 Onions finely copped
1/2 tsp. Cumin seeds(jeera)
1/2 tsp. Mustard seed
2 tsp. Ghee or Butter
Salt to taste
1 Lemon Juice or Curd
P.N.: water should be 1 inch above the whole mixture

For Paste:

1 to 2 Tomatoes
1 Onion
2 tsp. Cumin seeds
2 tsp. Coriander leaves
1 tsp. Tamarind
4 to 5 Green Chillies
2 Red Chillies
2 to 4 cloves Garlic
1 inch long piece of Ginger

Method:

  1. Put the rice into sieve. Wash throughly under a cold running tap until the water runs clear. Keep the rice for half an hour. You can cook pullav directly in the pressure cooker instead of cooking it separately, course the masala's taste with the rice and vegetables should combine.
  2. Heat the pressure cooker put butter or ghee, pop the musturd seed and cumin seed, bay leaves, pepper etc. fry onions till brown then add the paste and fry till the paste is cooked.
  3. When the ghee or butter float, add the veg., salt, rice, lemon water and mix it well. The ingredients in the cooker should be soaked in water which should be 1 inch above the pullav. Let the water boil then cover it with the lid, put the whistle when the steam and water comes. Cook till 3 whistles.
  4. For Garnishing: Fry cashew nuts in ghee, coriander leaves finely chooped.
  5. Serve it hot with Cucumber and Onion Salad with hot fried papad.

Cooking Time: 1 HR.
