Avial

Ingredients

Vegetables:

Long Drumstick - 1
Large Potatoes - 2
Raw Banana - 1
Eggplant (small Or Big) - 1
Suran (Yam) - 150 grams
Beans - 6 or 8
Ash gourd - 150 grams
Colocasia (Optional) - 5 Nos
Sour Curd - 1 cup

For Paste:

1/2 Coconut, grated
7 Green Chillies
1 tsp Cummin seeds

Method:

  1. To make the paste: Grind together the coconut, green chillies and cummin seeds into a fine paste, adding very little water. Mix the curd to the ground paste. Set aside.
  2. Peel and chop all the vegetables into 2 inch lengths. Boil the the drumstick, yam, first these half done then add the rest of the vegetables and raw banana and cook till nearly tender.
  3. Add the paste and heat through, taking care to prevent curdling, cover and cook for a few minutes.
  4. Heat 1 tsp coconut oil or any oil and add few curry leaves. Mix well. Do not heat.
  5. Serve hot with Rice or Adai.
