Hello friends,
I'm Madhuri. I love this site. And this is the first time I'm posting a recipe to this site. Here is my hubby's recipe for one of those lazy weekend brunches.

Quick Pasta

Ingredients

Olive Oil - 1 table spoon
Onion - 1/2 large onion cut into medium pieces
Ripe Cherry tomatoes - About 3 cups - cut into halves
Basil leaves - a hand full cut into small pieces
Grated Cheese (for garnishing)
Dried Oregano (for garnishing)
Salt - for taste
Chilli powder - as per your taste
Long Spaghetti - 2 hand (fist) fulls
Water - about 4 cups

Method:

  1. In a sauce pan, boil the water. When the water comes to boil, add the spaghetti and let it boil for 2-3 minutes (see that the speghetti does not get too soft & mushy). Reserve about 1 cup of water and drain the spaghetti.
  2. Simultaneously, in a thick bottomed 10-12" frying pan, put the olive oil(it gets heated up very soon) and when the oil heats little bit, add the onion pieces in and saute them for 2-3 minutes on med-high.
  3. Add the cut cherry tomatoes and saute them for 4-5 minutes. Please don't mash them. If it is dry, you can add about 1/4 cup of reserved water from speghetti.
  4. Then add the salt and red chilli powder for taste and add the cut basil and fry for a minute or two.
  5. Add the drained speghetti and mix well. (Check for the salt and spice).
  6. Transfer into a serving dish and top it with some grated cheese and dried Oregano. Hope you like it. It tastes good when served hot. This yields about 3 servings.
