Singapore Noodles

Ingredients

Rice Noodles - your choice (take little ,they become more after cooking)
Broccoli-1 floret
Carrot-1
Green Peas-1/2 cup
Potato-1
Onion-1 big
Green Chillies-2 to 3 (according to your taste)
Ginger-1 inch piece
Madras Curry Powder-1 teaspoon
Salt -to taste

Method:

  1. Heat water in a big bowl. When it starts boiling switch off the stove and add rice noodles to it (add spoon of oil to separate noodles from each other). Keep for few minutes till rice noodles gets tender. (you can test by taking noodle in your hand). Don't let it for long time. Now extract water from it. Let them cool.
  2. Cut green chilies lengthwise, cut carrot, broccoli, potato, ginger and onions lengthwise.
  3. Cook carrot, broccoli, potato for 1 minute in a microwave.
  4. In a separate pan add 2 to 3 spoon oil and add seasoning like little mustard seeds and urad dal, cumin seeds then add green chillies, onions, ginger, green peas. Fry for few minutes add all cooked vegetables. Now add Madras curry powder, salt. Stir them for few minutes in a low flame.
  5. Add cooked rice noodles to it. Mix all properly. Your Singapore noodles ready to eat.
