I am Shampa from Edinburgh. Today I am going to share a recipe for a delicious sweet and sour chutney. It's my favourite and I am sure you will like it too.

Triple Treat Chutney

Ingredients

Dried Mango Pulp (Amsatta) half a bar (200 gm)
Stoned Dates 10
Raisins, 1/2 cup
Tamarind pulp, 3 tbsp
Sugar, 1 cup
3 Red dried chillies
1 tsp Cumin seeds
1 1/2 tsp Coriander seeds
1 tsp Fennel seeds
1 tsp grated Ginger
1 tsp Oil

Method:

  1. Cut the mango pulp bar into little cubes. Cut the dates into pieces and soak them in a cup of water if they are raw.
  2. Put a pan on the stove. When it is hot, add all the spices ad dry fry till they splutter. Grind them in a mill into fine powder.
  3. Heat oil and add the raisins. Stir them around until they puff up. Remove them from the pan and keep aside.
  4. Add the ginger to the pan and stir for a minute. Add the mango cubes and dates and stir for a couple of minutes and then add the tamarind pulp and sugar. Add 3 cups of water and boil until the chutney is concentrated and the fruits are a bit mushy.
  5. Finally add the raisins and 2 tsp of the spice powder and stir.

Always check for sweetness. 1 cup of sugar is ok for me. But Some may find it a bit more khatta. So add more sugar if you want. You can have this chutney with any Savouries, Parathas and Pappads.
