I am Vijaya Natarajan from Mumbai. I have a basic chutney powder recipe which has a very long shelf life. Using this chutney powder many variations of chutneys can be made very quickly.

Quick Chutneys

Ingredients

Urad dal - 1 cup
Channa dal - 1/2 cup
White Til or gingely seeds - 1/4 cup
Red Chillies whole -- 20 nos
Groundnuts - 1/4 cup
Salt to taste
Tamarind -- lemon size ball

Method:

  1. Dry roast all the above ingredients one by one (except salt and tamarind).
  2. Grind to a coarse powder with salt and tamarind and keep in an airtight container.
  3. When we want to make any vegetable chutney (for example tomato and onion chutney) take 2 tomatoes and 2 onions cut them finely and fry them in a tablesopoon of oil. Cool this and grind it to a fine paste with a little water. Add to the paste one or two teaspoons of the chutney powder mix well and use it. (add a little more salt according to the amout of vegetables used).

The other vegetables which can be made into chutney in the same way are tender snake guard, chow chow, tender ridge guard, tender red pumpkin, small onions,etc.
